Tasted at Saratoga Whiskey Club Tasting # 95 - Bourbon New Year! This whiskey is available only at the Bardstown Bourbon Company distillery. It is neither a bourbon nor a rye. Instead it is an American Whiskey - it is blend of various mash bills and stave combinations. It is a non-age-statement whiskey, although the youngest whiskey in it is 6 years old. The blending and maturation process is as follows: Original Blend: 45% Indiana Rye: 7 years, 51% rye / 45% corn / 4% malted barley + 35% Kentucky Bourbon: 12 years, 74% corn / 18% rye / 8% malted barley + 20% Indiana Rye: 6 years, 95% rye / 5% malted barley. It is then finished for 3 weeks in different oaks: 67% in Pure 2 Oak Staves of which 5% goes into the blend and 23% in Spice Rack Oak Staves of which 5% goes into the blend. Then, a final blending is done with 87% of the previous whiskey + 13% Tennessee Whiskey: 17 years, 84% corn / 8% rye / 8% malted barley.
