Clonakilty Distillery is a new distillery that produced their first spirit in May of 2019. The Scully family began finishing and warehousing whiskey in 2016 on site on their 200-acre family farm overlooking the Atlantic Ocean, 8 km from distillery. This whiskey was created from 83% ABV new make sourced from an unnamed distillery, diluted to 63% with local unfiltered water prior to maturation, and then bottled at 43.6% ABV. This whiskey is a blend of 8 Yr single grain and 10 Yr triple-distilled single malt, matured in ex-bourbon and then finished for 6 months in an ex-Port cask. One of 600 bottles.
