Tasted at Dornoch Castle Hotel. This whisky was distilled in 1996 at Clynelish, matured in a refill bourbon barrel, and bottled by Thompson Brothers in Dornoch. The Thompson Brothers began their whisky bottling in enterprise in 2013, establishing the Black Isle Whisky Company in their native Dornoch. The brothers, Simon and Philip, renamed the operation as the Dornoch Distilling Company and opened the Dornoch Distillery in 2016. In addition to distilling their own whisky, the Thompson Brothers continue to provide independent bottlings. This Clynelish is one of 300 bottles.
