Tasted at Saratoga Whiskey Club Tasting #98 - What's New at First Fill February 2022. This is a whisky made from 100% rice, single distilled in a stainless steel pot still at Fukano Distillery. Fukano has been making spirits since 1823. Their process involves long (< 1 week) fermentation, which produces a clean wash at about 18% ABV, which is then single distilled to about 45% ABV when it goes into the cask. This special release 2021 edition was matured in red wine and Manzanilla Sherry casks. There were 2550 bottles in the release.
