Tasted at First Fill Spirits (Saratoga Springs, NY USA). Hakata Whisky is distilled and matured in Fukuoka, Japan by the Hikari Distillery (which was founded in 1912). Their whisky is made out of 100% malted barley; and a fraction of this has been fermented with Koji, an iconic Japanese process, typically used in addition to yeast, to create an “Umami” taste. This whisky was matured in a sherry cask.
