Kaiyo, or "ocean" whisky, is a Japanese whisky made from 100% malted barley, sourced from more than one distillery in Japan, hence a blended malt, and not a single malt. All Kaiyo whisky spends at least 3 months maturing at sea in Japanese Mizunara Oak casks. This expression, The Peated 2nd Edition, was malted in Scotland with 100% Islay peat, then distilled in Japan, matured for over 2 years in ex-Madeira casks, then transferred to Mizunara casks for 6 years. I tasted this expression at Julio's Liquors (Westborough MA).
