Kaiyo, or "ocean" whisky, is a Japanese whisky made from 100% malted barley, sourced from more than one distillery in Japan, hence a blended malt, and not a single malt. All Kaiyo whisky spends at least 3 months maturing at sea in Japanese Mizunara Oak casks. This expression was matured for 8 years in 1st-fill Spanish Oak Oloroso casks, then 2 years in Mizunara, then 6 months in 1st-fill Spanish Oak Pedro Ximenez casks. I tasted it at Saratoga Whisky Club Tasting #58 - Kaiyo.
