LAWS Whiskey House and Distillery are based in Colorado where they feel the thin, dry air and the hot days and cool nights are perfect for maturation. They also are focused on heirloom and heritage grains. These can be low yield and difficult to work with but they feel it is important to stick with them. They are dependent on two local, family farms. One farm is in the San Luis Valley and the other is on the eastern plains of Colorado. This whiskey was made from rye in the San Luis Valley.
