Penelope Bourbon is a four-grain Whiskey, named after the founders’ recently-born daughter. It’s made from three mash bills (99% corn 3yr, 21% rye 2yr, 45% wheat 2yr) sourced from MGP in Indiana, then blended and bottled at Castle & Key in Kentucky. The resulting blend varies slightly from batch to batch, but is approximately 75% corn, 15% rye, 7% wheat and 3% malt.
