Penelope Bourbon is a four-grain Whiskey, named after the founders’ recently-born daughter. It’s made from three mash bills (99% corn 3yr, 21% rye 2yr, 45% wheat 2yr) sourced from MGP in Indiana, then blended and bottled at Castle & Key in Kentucky. The resulting blend varies slightly from batch to batch, but is approximately 75% corn, 15% rye, 7% wheat and 3% malt. This experimental whiskey (not available for purchase) started with the Barrel Proof Penelope Bourbon, and then finished it in Pedro Ximenez sherry casks from Speyside Cooperage for 30 days. It was bottled on 28 May 2020. I tasted this whiskey at the Saratoga Whiskey Club Tasting #53 - Penelope Bourbon, hosted by Penelope founders Mike Paladini and Danny Polise.
