Tasted at Saratoga Whiskey Club Tasting # 105 - American Whiskey. Proof and Wood is an independent bottler, founded in 2015 by Dave Schmier, who created the Redemption brand. This selection from Proof and Wood’s Curated Collection is a blend of American Whiskies. It is the second release under the ‘Seasons’ label. It features a spirit aged for an unusually long period of time (a TN Bourbon from 2003 that has endured 72 seasons (i.e. 18 years) in a barrel) balanced with younger whiskies. Aged 8–18 years Composed of Kentucky whiskey distilled from 99% corn in 2013, bourbon (mash bill of 75% corn, 21% rye, 4% barley) distilled in Indiana in 2015, American Light Whiskey distilled in Indiana in 2007, and Tennessee bourbon distilled in 2003. Finished in used American rye barrels for 8 weeks; blended and bottled in 2021. There were 1000 bottles in the release.
