Tasted at Saratoga Whiskey Club Tasting # 110 - Two Stacks Irish Whiskey, hosted by Donal McLynn of Ireland Craft Beverages, live via Zoom. This is a sourced whiskey from Great Northern Distillery in Ireland; and it is blended by Two Stacks, an independent bottler and a subsidiary of Ireland Craft Beverages. From Two Stacks: Two Stacks was created by three longtime friends at the forefront of reinvigorating and reimagining the historically calcified Irish beverage industry. Taking their name from the twin smokestacks of historic Old Dundalk Distillery—stacks so tall they used to act as landmarks guiding ships to port—Two Stacks aims to guide modern consumers to the welcoming waters of Ireland’s best whiskies with an emphasis on transparency and integrity in sourcing. Reinvesting in the blending process as artisanal rather than industrial, every step of their production is done traditionally: by hand, by taste, and by smell. Independently blended and bottled, this Irish Whiskey is a complex, thoughtful, and balanced combination of 5 distillates sourced from The Great Northern Distillery in Dundalk. The Great Northern Distillery began operations in 2015, and released their first 3-year-old whiskey in 2018. The blend in this whiskey is composed of grain whiskies aged in both ex-bourbon and virgin American oak barrels (80%), double-distilled, un-peated single-malt (10%), double-distilled peated, single malt (2%) & Single Irish pot still whiskey (8%). This whiskey was then finished for 6-8 months in a single Tawny Port Cask. Photo courtesy of First Fill Spirits (Saratoga Springs, NY USA).
