Waterford describes this as Ireland's first organic whisky. It is part of The Arcadian Series. Gaia, is a the neopagan goddess, a personification of Mother Earth, and was selected as the name for Ireland’s first whisky distilled from certified organic Irish barley. The Waterford provenance or TEIREOIR code of this whisky is OR01E01-01. Every Waterford whisky can be traced by its code to provide information about the barely and the process used to make the whisky. The organic farm growers who provided the barley were Jason Stanley, Paddy Tobin, Trevor Harris, John Mallick, Pat Booth and Alan Jackson. The barley was harvested in the summer of 2015, distilled September 4th to 13th of 2016, filled at the warehouse on 16 September 2016, matured for 3 years, 9 months and 20 days. The casks were married on 6 July 2020, and bottled in August and September of 2020. There were 24,000 bottles in the release.
