Tasted at Saratoga Whiskey Club Tasting # 190 - Irish Arrivals. This is a heavily peated whiskey (55 ppm phenols). Ardara intends to make all peated whiskey. One of the unique attributes of their distillation process is that they use an "all grain in" approach from mash tun through stills: they do not filter out the solids as they move the wort from the mash tun to the washbacks, nor as they move the wash from the washbacks to the stills.
