Tasted at Shelbourne Bar (Cork, Ireland). This single-pot still whiskey was matured in a combination of bourbon and sherry casks, and then finished in Japanese cedar wood casks. I'm not quite sure how I feel about it. The mint, pine and bananas made an odd combination.
