Tasted at Shelbourne Bar (Cork, Ireland). This single-cask single-malt whiskey was distilled by Bushmills and matured by The Celtic Whiskey Shop for 17 years in a bourbon barrel and 1 year in a Pedro Ximenez sherry cask. Cask # 0468. Distilled 2003, bottled 1 Dec 2022. The cask yielded 199 bottles. It is an outstanding dessert dram - raisin chocolate-chip cookies and peach cobbler - yum!
