Tasted at Saratoga Whiskey Club Tasting # 205 Japanese Whisky Dinner at Sara's Kitchen (Saratoga Springs, NY). Shindo Distillery was founded by the 200-year-old sake and shochu producer Shinozaki ,and began whisky production in August 2021, combining centuries of traditional Japanese fermentation expertise with modern distilling science. Experimental 01 was released in late 2025. This edition, Experimental 02 was released in February 2026. The fermentation makes us of proprietary fresh-pressed yeast. The whisky was matured in a combination of casks that were 89% bourbon, 6% Oloroso Sherry and 5% brandy.
