Tasted at Saratoga Whiskey Club Tasting # 99 - Glass Revolution Imports, hosted by Raj Sabharwal (@WhiskyRaj) of Glass Revolution Imports (glassrev.com). This is the first biodynamic whisky in the world. There was no commercial fertilizer used in the growing of the barley, which came from 4 separate farms. Each barley was mashed, fermented, distilled and matured separately. The whiskies were married together after maturation. All underwent 194 hours of fermentation, which is roughly 2-3x normal Scottish fermentation times. This leads to banana and bubblegum flavor notes. The barrels were filled 85-86% ABV - bourbon, new American oak, French refill oak, and Vin du Naturel Amarone. the total maturation time for each barrel was 3 years, 2 months and 1 day.
